3 Large size beet roots

1 Medium onion

1100mls chicken stock

56gms Sugar

2 Eggs

600mls sour cream

Juice of 2 lemons

Salt and Pepper to taste

 

Take the three large-sized beets, peeled and grated with 1 medium-sized onion, on a coarse grater and place into a pan with the chicken stock and bring to the boil and simmer 30 minutes. Add 56gms of sugar, and salt and pepper to taste simmer 5 minutes more. Beat 2 eggs with 600mls of  sour cream, remove the pan from the heat and pour in slowly and stir then add the juice of 2 lemons and stir in well and serve.
