600gms Tripe

6 Med onions graded

600ml Milk     

2 Tablespoons flour

30gms butter

 

Cut the tripe about 10cm long and 6cm wide and place in a sauce pan with the onions, now pour water to just cover and simmer slowly until nearly all the water is gone. In the mean while melt the butter in a second sauce pan on a med heat when melted add the flour and stir in well now slowly add the milk a little at a time until all the milk has been added turn down to a slow simmer when the tripe is ready add to the white sauce with the onions and simmer slowly for 20mins and stir from time to time and serve.
