Romanian Sauerkraut Soup (click here to open)
  • 460grms Sauerkraut
  • 3 Med onions graded
  • 1500mls Veg stock
  • 190grms Smoked sausage
  • 40grms Flour
  • 1 Garlic clove crushed
  • 1 Lemon Juice (fresh)
  • 1 Lemon zest
  •  salt and pepper to taste
  • 300mls Sour cream
 
Put the onions and crushed garlic into saucepan on a med to high heat and cook until soft then turn the heat down to low to med and add the flour and mix well, then add the stock slowly stirring all the time. When all the stock is added bring to the boil then turn down to a med heat and add the cabbage and cook for 3mins then add the smoke sausage lemon juice, salt and pepper to taste and cook for 3mins more then remove from the heat and add the sour cream slowly and stir while adding leave 4 tablespoon of cream to add later. Now take the soup bowls and place the soup into the bowls with a little of the cream you saved and place on top then place some of the lemon rind on top of the cream and serve
