1 chicken breast
½ onion
300ml water
1 chicken stock cube
1 teaspoon dried parsley
100ml milk
1 tablespoon of butter
1 tablespoon of flour
salt and pepper
Cut the chicken into 1 inch squares and cut up onion and place to one side now bring the 300ml of water to the boil and turn down to a simmer. Add the chicken, onion, stock cube and parsley to the water and cook until the chicken is cooked when cooked remove from heat and place in a blender and bend until smooth and return to the saucepan with the 100ml of milk. Mix the four and butter to together and add to the soup and mix well and bring to the boil add salt and pepper to taste and serve
