1kg Lamb chops (best end )
2kg Potatoes
8 Large onions
Salt and pepper to taste
Lamb stock to finish
Take the lamb chops and cut off the fat, wash and peel the potatoes and slice medium thick, then peel the onions and slice as the same as the potatoes. Now take a heavy pan with a lid or a slow cooker which i find good for stews. and place a layer of mixed potatoes and onion on the bottom then lay the meat on top of the potatoes and onions then season with salt and pepper now take the rest of the potatoes and onions and lay on top of the lamb chops, now take the lamb stock and fill so as to just cover the top layer, put on a med heat for 10mins then turn down and simmer very slowly for 4 hours and serve with some good bread.
