Woodcock With Cream
Ingredients
3 Woodcock cut in half
1 Celery stick roughly chopped
1 Carrot roughly chopped
1 Shallot roughly chopped
400ml Veg stock
1 Garlic clove crushed
1 Shallot cut small
1/4 Green pepper chopped small
1/4 Red pepper chopped small
150ml Cream
Take the woodcock and place in a slow cooker on low with the celery, carrot, shallot and veg stock and cook for 4 hours, after the 4 hours remove the wood cock and leave to cool (keeping what's left in the slow cooker to make soup). Take a saucepan with very little oil on medium fry the garlic, shallot, green pepper, and red pepper cook until just cooked then turn down low, in the mean while take the wood cock and remove all the meat and break up to mouth size, when the ingredients in the saucepan are just cooked add the wood cock and cream on a low heat simmer for 20mins stirring from time to time not letting it boil and serve.
