Woodcock with Capers

Ingredients

4 Woodcock

4 Chicken livers

2 Anchovies

1 Tablespoon capers

1/4 Tablespoon fresh parsley chopped

1 Shallot chopped fine

2 Mushrooms chopped fine

1 Tablespoon butter

2 Egg Yolks

100ml red wine

 

Take all the above ingredients (not the woodcock and wine) and put into a food processor and make into a paste. Take the woodcock and cut along the back bone and open up and remove the back bone and rib bones and spread the paste on the inside, now place on a oven tray breast down with the wine and cover with tin foil and place in a preheated oven 180c and for fan ovens 160c for 40mins, then remove the tin foil and turn down to 160c and for fan ovens 140c for 20mins then remove and serve.
