Woodcock Supper
Ingredients
2 Woodcock legs (whole) cooked
2 Chicken livers
6 Mushrooms chopped fine
1 Shallot finely chopped
Trail from cooked woodcock
1 Tablespoon butter
Salt and pepper to taste
Pinch of mix spice
2 Slices of bread
Juice from half orange
1 Tablespoon fresh parsley finely chopped
Take a frying pan on a medium heat, add the butter when just melted add the shallots and cook for 2mins then add the mushrooms when cooked remove from the frying pan and place in a bowl. Now fry the liver when just cooked add to the bowl with the mushrooms and shallots and trail and mix then add to a food processor and mix until smooth paste then put into a dish for later. Preheat the oven to 180c or for fan ovens 160c. Remove the legs as a whole and put to one side. Now fry the bread until lightly brown then place on a oven tray and cover both with the liver paste and place one leg on each and place in the oven for 10mins, to serve plate and pour over the orange juice and a little of the parsley and serve.
