Venison Pie
Ingredients
300gms Venison cut small
2 Tablespoons flour
1 Tablespoon butter
Salt and pepper to taste
1 pork sausage skin removed
1 leek chopped small
Pinch of mace
2 Anchovy's chopped small
50ml Red wine
Pastry to line pie dish and lid
Take the flour and put into a bowl with the salt and pepper, now add the venison and coat well with the flour. Take a frying pan and add the butter on a medium heat when the butter has just melted add the venison and lightly brown, then remove from the heat and return the venison to the bowl with any butter left in the frying pan, then add the sausage meat, leek, mace, anchovy's and red wine and mix well. Take a small oven dish and line with the pastry, take the venison mix from the bowl and put into the oven dish and put the pastry lid on the pie and brush with beaten egg and place in a preheated oven at 180c, for fan ovens160c for 2 hours and serve.
