ROAST RABBIT

Ingredients

1 Rabbit

4  Slices of streaky bacon

1/2 0f medium onion

8 Crackers

1/2 cup of boiling water

1 teaspoon  dry sage

Salt and pepper to taste

1 egg

2 tablespoons of butter

 

Prepare the stuffing by chopping fine the bacon and the onion . Put the crackers into a bowl and pour over the boiling water, then add the bacon, onion, sage, salt, pepper and egg and mix well if looking a bit dry add more boiling water. Wash the rabbit in cold salted water and wipe dry. The rabbits back legs will be looking back they need to look forward towards the front legs to do this just push then forward or cut where they join the body . Now fill the rabbit with the stuffing and spread the butter over the rabbit. Now rap the rabbit in tin foil and cook for 3hours at 180c  or a fan oven 160c  after 2 hours remove the foil.
