Rabbit With Oysters

Ingredients

1 Rabbit cut into 4

12 Oysters

Pastry to line dish and lid

4 Medium boiled potatoes sliced

4 Tomatoes sliced

1 Tablespoon butter

1 Teaspoon cornflour

80ml Chicken stock (cold)

Salt and Pepper to taste

Put a saucepan half full of water on a high heat and bring to a boil then turn down to a simmer then take the rabbit after being washed in salt water and place in the saucepan and cook for 4 hours. After 4 hours remove the rabbit and cool then remove all the meat from the bones. Now line the pie dish with the pastry and blind bake. Take the oysters and there liquid and put into a saucepan on a medium to high heat and cook for 3mins. Preheat the oven to 180c or 160c for fan ovens.  Take the rabbit, oysters, potatoes and tomatoes and place in the pie dish in layers and dot each layer with the butter and salt and pepper to taste, when finished mix the cornflour and stock together and pour into the pie dish, now put on the pastry lid and bake until golden brown and serve.
