Potted Grouse

Ingredients

1 Grouse

Salt and Pepper to taste

3 Tablespoons butter

20ml Port

50ml Red wine

Take a deep oven dish just a little bigger than the grouse. Take the grouse and place 1 tablespoon of butter inside now place the grouse in the dish and cover with rest of the butter and pour the port and wine over. Cover the dish with tin foil and place in a preheated oven at 180c or for fan ovens 160c for 1 hour. Remove the grouse from the oven and let go cold, when cold remove the meat and make small, making sure to mix the leg meat and breast meat well together, pot into small pots press lightly leaving a small place on the top to pour the clarified butter then place in fridge for 1 day before ready.
