PIGEON IN BREAD CRUMBS

Ingredients

1 Pigeon cut in halve  

1/4 Cup red wine vinegar

3/4 Cup of veg cooking oil

1 Medium shallot chopped fine

1/2 Cup fresh chopped parsley

Salt and pepper to taste

2 Cups of bread crumbs

Remove the wings from the pigeon and put to one side. Now make a marinade with the red wine vinegar, veg cooking oil, shallot, parsley and mix well season with salt and pepper to taste, add the two halves of pigeon to the marinade making sure that all parts are marinated and marinate for one hour. Remove from the marinade keeping as much of the marinade on the pigeon as possible and roll in the bread crumbs and deep fry until golden brown and serve.
