Partridges with Truffles
Ingredients
2 Partridges
2 Chicken livers cut small
2 Shallots finely chopped
1 Tablespoon olive oil
30g Truffles chopped small
150ml white wine
Preheat the oven to 170c or for fan ovens 150c, put the livers inside the partridges and place in a roasting tin with a little oil, and covered with tin foil, put into the oven for 40mins. 10mins before the 40mins is up put a saucepan on a medium heat and lightly fry the shallots in the olive oil, after 40mins remove the partridges from the oven and remove the livers and put the livers into the saucepan with the shallots and add the truffles and wine, turn the heat down and simmer for 15mins. In the mean while remove the meat from the partridges and plate and pour the truffle sauce over and serve.
