Partridges With Onions

Ingredients

2 Partridges

1 Tablespoon butter

4 Medium onions sliced

Salt and pepper to taste

4 Slices streaky bacon

1/2 Cup fresh parsley chopped

2 Shallots cut in half

4 Medium mushrooms sliced

200ml White wine

Take the partridges and cut along the back to open up and remove the bones from the inside. Add butter to a frying pan on a medium heat when just melted add the onions and fry until brown, now take the partridges season the inside  with the salt and pepper and put half the onions in each and close the partridges back up and tie to looked as before removing the bones. Take a frying pan on a medium heat and nicely brown the partridges, then add to a casserole dish with lid, just a little bigger than the two partridges, now cover the partridges with the bacon, then add the parsley, shallots, mushrooms, and wine and put on the lid and place in a preheat oven at 180c or for fan ovens 160c for 1 hour and 20mins for the last 20mins remove the lid then serve.
