Partridges With Cabbage and Lentils
Ingredients
2 Partridges
1lt Veg stock
1 Herb garni
2 Whole cloves garlic
Cabbage for 2 leave leaves whole
Lentils for 2
2 Tablespoons melt butter
1 Tablespoon flour
1/2 Tablespoon butter
Take a large saucepan with the stock, herb garni, and garlic and bring to a boil, when just boiling turn down to a simmer and add the partridges and simmer for 1hour and 20mins. In the mean while have ready the cabbage and lentils watch your timing the lentils and cabbage are to be served hot, read to the end to get your timings . Preheat a hot oven 220c and for fan ovens 200c. After 1 hour and 20mins remove the partridges and when still hot wipe dry and brush with the melt butter and place in the oven until golden brown 5 to 10mins. In the mean while take the flour and butter and make into a paste and put to one side. Take 200ml of the stock and add it to a saucepan on a medium heat and add the flour paste and mix well and bring to a boil then simmer for 10mins. To serve place cabbage on a plate then place partridge in the centre and lentils around the edge and serve with the sauce.
