PARTRIDGE WITH PEARS
Ingredients
2 Partridges
1 Tin of pears
1/2 Teaspoon butter
10ml of brandy
50ml White wine
Salt and pepper to taste
Put the partridges in a casserole dish with a lid not much bigger than the partridges, now put 1/2 a pear in each partridge and the rest of the pears around the partridges and pour the juice from the tin over the partridges and place on the lid, and place in a preheated oven at 180c or for fan ovens 160c for 2 hours. After 2 hours remove from the oven and take out the partridges and put to one side, pour the juice and the pears from the dish into a sauce pan mash the pears and put on a medium heat, take the butter and add it to the sauce pan and mix well now add the brandy and wine stir in well turn the heat down low and simmer for 10mins and stir from time to time. Now plate the partridges and pour the sauce over and serve.
