GROUSE WITH MUSHROOMS

Ingredients

1 Grouse

1 Chicken liver chopped

4 Medium mushrooms chopped fine

1 Teaspoon butter

1 Small shallot chopped fine

Pinch of nutmeg

1 Tablespoon bread crumbs

Salt and pepper to taste

1 Teaspoon olive oil

10 Medium mushrooms chopped small

1/2 Garlic clove crushed

300ml double cream

Pinch of Cayenne

Salt to taste

Take the chicken liver and lightly fry and add to a bowl now lightly fry the mushrooms in the butter and add to the bowl with the butter, now add the shallot, nutmeg bread crumbs and salt and pepper to taste and mix well and put in a small dish to cook in the oven. Take the grouse and place in a roasting tray and place in a preheated oven at 200c or fan ovens 180c for 40mins or cooked to liking, place the dish of forcemeat in the oven for 25mins before the grouse is ready. When the grouse is cooked remove from the oven and put to one side to rest. In the mean while take a frying pan with the oil, on a medium heat and fry the mushrooms and garlic, when just cooked remove from the heat and stir in the double cream and return to a low heat and add the cayenne and salt to taste and simmer for 5mins. Take the grouse and cut in half and serve with the sauce and forcemeat .
