Grouse in Bread Sauce

Ingredients

1 Grouse

300ml milk

1 Clove of garlic cut in half

1 Tablespoon fresh parsley chopped

1 Shallot roughly chopped

1/4 Teaspoon dried thyme

1 Bay leaf

1/2 Teaspoon dried basil

1 Teaspoon of butter

Salt and Pepper to taste

1 Cup of bread crumbs

 

Take the grouse and remove the breast meat as a whole and remove the skin, now remove the legs and put back to one side. Take a sauce pan and add all, but not the salt and pepper and bread crumbs to a sauce pan, bring to a slow boil then turn down low, now add the breast meat and simmer for 20mins, remove from the heat, and remove the breast meat and keep warm. Make hot oil for deep frying. Take the sauce pan with the milk and ingredients in and sieve into a clean sauce pan and add the bread crumbs and the salt and pepper to taste and put on a medium heat and mix well for 3mins then turn down low and add the breast meat and simmer for 5mins, in the mean while add the legs to the hot oil and deep fry until golden brown. To serve remove the breasts and plate, then pour a little of the bread sauce over, then place one of the legs on top and serve.
