GROUSE CAYENNE
Ingredients
1 Grouse
Salt and Pepper
1 Tablespoon of butter
2 Teaspoons of flour
1/2 Teaspoon of cayenne
180ml of chicken stock
Salt and Pepper to taste
Remove the wings and split the grouse in halve and tuck the legs inside. Melt the butter in a frying pan on a medium heat do not let it go brown, when just melted add the grouse and continue to cook until nicely browned, remove from the heat and place the grouse on a warm plate to rest. Take the same frying pan which the grouse was cooked in and return to the heat and add the flour and cayenne and mix well with the juices in the pan, now gradually add the chicken stock and mix well season with salt to taste and simmer on a low heat for 10mins and serve with the sauce poured over the grouse
