Fillet of Venison

Ingredients

4 x 110g slices Venison fillets

1 Teaspoon butter

3 Egg yolks

1/2 Teaspoon nutmeg

1/2 Grated lemon peel

Salt and pepper to taste

1 Cup flour

2 Cups bread crumbs

2 Slices of bacon

2 Slices of lemon

Melt the butter in a microwave and add the egg yolks, nutmeg, lemon peel and salt and pepper to taste and mix well, dip the venison in the flour well coated then the egg mix then the bread crumbs, then deep fry until golden brown. In the mean while cook the bacon until crispy. And serve the venison with the bacon and the slices of lemon.
